The Lab Foodtruck specializes in what they call "Project Braising". They braise (slowly-cook) their meats, ranging from pork shoulders, pork bellys, to beef short-rib and briskets. They offer them in a variety of tacos, sandwiches and platters. And stand by their hashtag #iwasbraisedinthestreets
